The month of February has brought Calgary some extremely cold temperatures. We thought we could offer you a delicious recipe to keep you warm on those cold days. This is the kitchen favorite soup for those long winter days. This Corn Chowder is easy to make and will keep you warm and cozy.
Corn Chowder
- 2 Cups Yukon gold potatoes, peel and diced
- 1 small onion, finely chopped
- 1 Cup celery, diced
- 3 ½ Cups of Chicken broth
- 2 Cups Corn kernel, frozen or fresh
- 1Tbsp cream
- 1Tbsp Cajun seasoning
- Salt and pepper to taste
- Bacon bits (optional)
In a saucepan brown the onion and celery. Add the diced potatoes and stir for 1 minute. Add the chicken broth and the corn. Bring to boil then gently simmer for about 20 minutes or until the potatoes are tender.
Take half of the soup in a separate bowl. With a hand blender, blend it until smooth. Put back in the saucepan with the rest of the soup. Add the Cajun seasoning, the cream, and the bacon bits if desired. Seasoned to taste. Bring to boil and let simmer for 5 minutes.
Note: Feel like seafood chowder? Simply add Shrimp, lobster, clams or chunk of white fish when you add the cream and simmer until cook (usually around 5-8 minutes).
