Summer days are finally here! One easy snack that I really like during summer is salsa. It is so versatile! You can use it as a dip, a snack or a sauce for your dinner. This month, I am sharing with you two kinds of salsa that can be used in so many ways! Try them with tortillas chip or put it them in your favorite tacos. I personally love the mango salsa on salmon! It brings out so much flavor. Have your little sous-chefs help out. They will love it!
Tomato Salsa
- 4 Roma tomatoes, cored and diced
- 1 C corn Kernels, roasted
- 1 green onion
- Jalapeno pepper seeded and finely chopped (to taste. If you don’t want spicy, use green bell pepper instead)
- ¼ C chopped cilantro
- ½ lime, juice only
In a bowl, combine all the ingredients and season with salt and pepper.
Mango Salsa
- 1 C mango, peeled and diced
- 1 C Red bell pepper, seeded and diced
- 1 Roma tomato, cored and diced
- ¼ C red onion, finely diced
- 1 garlic glove, finely chopped
- 1 Tablespoon lime juice
- Cilantro to taste (optional)
In a bowl, combine all the ingredients and season with salt and pepper.
