Well, finally spring is here! It feels good to see the snow melting, doesn’t it? This month we brought sunshine into our kitchen! Lately, we’ve been working on delicious and colorful mango squares. Those squares are so delicious, we couldn’t keep it just for us.
Mango squares
Crust:
- 1 Cup All-purpose flour
- ¼ Cup sugar
- ½ tsp baking powder
- ¼ tsp salt
- ¼ Cup unsalted butter or margarine, melted
Mango filling:
- ¼ Cup sugar
- 1Tbsp cornstarch
- 3 eggs
- 1 Cup Frozen mango, thawed out
- ¼ C lemon juice
For the crust: Preheat the oven to 350F. Line a square 8-inch cake pan with parchment paper. Let the parchment hang over all side, it will be easier to unmold. In a bowl, combine all the ingredients until the dough has a grainy texture. Press into the pan and bake for 15 minutes. Let cool down while preparing the filling.
Mango filling: In a food processor, puree the mango. In a bowl, combine the sugar and cornstarch. Whisk in the eggs until well blend. Add the mango puree and the lemon juice. Pour over the crust and bake for 20 minutes or until it is set. Cool and refrigerate for 2 hours before unmolding and cutting.
